I recall that in the mid-90s someone had a clever solution to the trusted server problem for timestamping documents. Rather than have the trusted server provide a timestamp for the encrypted hash of the document, it combined the encrypted hash, the timestamp for the document, and the authenticated encrypted hash/timestamp for the previous document for which a timestamp had been provided, and then encrypted and signed (with public key encryption), the result. This yielded a chain of timestamp validations, so the trusted server could not modify the timestamp associated with a document without disturbing subsequent timestamps, thereby eliminating the need for the trusted server to be trusted.
